This next dish actually ended up being my favorite overall the ones we've tried. We bought some grass fed pork that tasted so good...and better compared to normal pork loin. I've never had grass fed pork, but the taste and difference is amazing! I forgot to take a photo of this one as well so I will post the recipe and the photo from the website. This also had me cooking with sauerkraut which I have never done. It was definitely a winner in my book!
Roasted Pork Loin with Apples, Onions, and Sauerkraut via Mark's Daily Apple
3 lbs of pork loin (we used 1 1/2 lbs)
1 large onion thinly sliced
2 apples peeled and sliced (we used one)
1 lb sauerkraut (we used about 16 oz)
Salt, paprika, and pepper to taste
First, select a roasting pan large enough for your pork loin to lay flat. Season pork loin with salt, pepper, and paprika to taste and roast in a preheated 350 degree oven for about 45 minutes. (we did about 20 minutes do to a smaller amount) Remove from oven, remove loin from pan and set aside. Line roasting pan with the sauerkraut (juice and all), top with pork loin and arrange apple and onion slices on top. Return to oven for an additional 45 minutes (total cooking time should run 20-30 minutes per pound of meat so adjust your time accordingly) or until internal temperature of pork loin registers 170 degrees on a meat thermometer.

Random Tidbits on Monday
I hope everyone had a great weekend! My brain is full of randomness this morning, so I thought I would share this with you guys!
*Molars are the devil. They change my child into a sensitive, whiny, and tantrum-throwing little toddler. We have two through with two others right underneath the gum line. Seriously, teething must be God's little joke on us.
*However the little guy all of a sudden will eat green beans and green peas. Small successes are what get me through the day.
*We won a lovely Adele DVD/CD combo from Sara at Life's Recipe, and Nolan loves dancing to it!
*I am seriously glad I use cloth diapers because my son poops all the time. I would be so broke if I used disposables!
*I bought Nolan new pajamas, and I can't believe is in size 24mos-2T! That's so crazy to me!
*I am ready for January to be over with. I don't really know why...but I keep looking at the calendar hoping it's February.
*Is it me or TV really bad right now? I have been reading a whole lot more of my Kindle because the TV doesn't catch my attention. I guess that's a good thing, right?
*We've had some great meals from the Primal Blueprint. Can't wait to share this week!
*My husband dug out our gigantic English Laurel yesterday. That thing was huge and pretty much eating the side of the house. We are getting new trees put in our yard next week (we have like 3 currently). We are also getting new siding and changing the color of our house. Stay tuned for before and after photos!

Recipes--Take 2!
Our next recipe we tried for our new eating Primal lifestyle was Texas Chili. I have never actually had chili that was used with big chunks of meat---mostly just ground beef, beans, and etc. Well friends I have been missing out! Sadly, I didn't get any photos of this beautiful dinner but here's the picture and recipe from Mark's Daily Apple.
- 3 lbs of chuck (we did 2 lbs instead for less servings)
- 2 tablespoons of olive oil
- 4 cloves of garlic, minced
- One 6-oz can of tomato paste
- 3 tablespoons of chili powder
- 1 tablespoon of dried oregano
- 1 teaspoon of sweet paprika (we only had the normal kind to use)
- 1 teaspoon ground cumin
Lightly season the beef with salt and heat in a large pot. We actually used our Dutch oven which worked perfectly for this application. Transfer beef to a plate and turn heat to medium. Brown onions and garlic, about 5 minutes. Return the beef to the pot and stir in tomato paste. (We also used a can of diced tomatoes to give it more liquid.) Cook 10 minutes and make sure to scrape the bottom of the pot. Add the chili powder, oregano, paprika, and cumin. You can also add cayenne. (My husband also added cinnamon and who knows what else to season it...he like to experiment with his chili seasoning!) Add 4 cups of water and bring to a boil. Reduce heat to medium-low: simmer partially covered, stirring occasionally, until meat is tender, about 2 hours.
And there you have it folks...an awesome Primal Texas Chili!

The Big 15 Months!
Ok so I worked on this awhile in Word then copied to paint to re size it and to save it as a JPEG file. Then it did something weird with the font, so sorry for it being a touch blurry on the words. I gave up after I found myself spending hours trying to fix it! I figured you guys would get the gist :)
Nolan had his 15 month appointment today and weighed 26 lbs, 12 oz and was 32.75 inches in length! That puts him in the 75-80th percentile for weight and the 90th for height. He's come a long way from the days of being in the 5-10th percentile!

Here We Go--The First Recipes!
So this is my very first post on this blog about recipes. Sad I know...and it's not because I don't cook. Oh well better late than never! The first recipe we tried for the Primal Blueprint was Eggplant Pizza. I have actually never cooked with eggplant...I know again I guess I've been hiding under a rock. I must say this one was delicious...with the mozzarella cheese, green peppers, onions, mushrooms, tomatoes and prosciutto as toppings. This cheesy goodness was gone very quickly! Here's my pic and the recipe:
Ingredients:

And the Journey Begins...
A little over a week ago my husband came home from work talking about this "Primal Blueprint" lifestyle. I didn't pay much attention at first, but he kept sending me links and recipes. It's not really a diet...it's more of a whole lifestyle. Here's what Mark from Mark's Daily Apple says is the blueprint for a Primal Lifestyle starting with the rules of living over 10,000 years ago.
1) Eat lots of animals, insects, and plants.
2) Move around at a slow pace.
3) Lift heavy things.
4) Run really fast every once in a while.
5) Get lots of sleep.
6) Play.
7) Get some sunlight every day.
8) Avoid trauma.
9) Avoid poisonous things.
10) Use your mind.
Sounds pretty basic, huh? But seriously that's what man did back in the day. Now how does this translate into today's world?
Here's how Mark uses and describes it on his website:
1) Focus on quality sources of protein (all forms of meat, fowl, and fish), lots of colorful vegetables, some select fruits (mostly berries), and healthy fats (nuts, avocados, olive oil). Observe portion control (calorie distribution) week to week more than meal to meal. Eliminate grains, sugars, trans- and hydrogenated fats from your diet.
2) Do some form of low level aerobic activity 2-5 hours a week, whether it is walking, hiking, easy bike riding, or swimming. Ideally, and when possible, find time to go barefoot or wear as little foot support as possible. Low-level activity is necessary (especially if you find yourself chained to a desk every day). The combined effect will be an increase in capillary perfusion, fat-burning and overall integration of muscle strength and flexibility.
3) Go to the gym and lift weights for 30-45 minutes, 2-3 times a week. Focus on movements that involve the entire body and in wide ranges of motion-not just on isolating body parts. Emulate the movements of our ancestors: jumping, squatting, lunging, pushing, pulling, twisting, etc. This will stimulate your genes to increase muscle strength and power, increase bone density, improve insulin sensitivity, stimulate growth hormone secretion, and consume stored body fat.
4) Do some form of intense of anaerobic sprint bursts several times a week. This could be as simple as six or eight short (or more) short sprints up a hill, on the grass, at the beach...or repeated intense sessions on a bicycle (stationary, road or mountain bike). These short bursts also increase HGH release.
5) Get plenty of quality sleep. Our lives are so hectic and full of things to do after the sun goes down that it's often difficult to get enough sleep. Yet sleep is one of the most important factors in maintaining good health, vibrant energy and a strong immune system.
6) Spend some time each week involved in active play. In addition to allowing you to apply your fitness to a real-life situation, play helps dissipate some of the negative effects of the chronic stress hormones you've been accumulating through the week.
7) Contrary to the "Common Wisdom" dispensed by dermatologists (who suggest you shun the sun), the Primal Blueprint would insist that you get some direct sunlight every day. Certainly not so much that you come close to burning, but definitely enough to prompt your body to make the all-important Vitamin D and to support the mood-lifting benefits. A slight tan is a good indicator that you have maintained adequate Vitamin D levels. Natural sunlight also has a powerful mood-elevation effect, which can enhance productivity at work and in inter-personal interactions.
8) Eliminate self-destructive behaviors. These concepts are self-evident to most people (wear seat belts, don't smoke or do drugs, don't dive into shallow water) yet so many of us live our lives oblivious to impending danger. Develop a keen sense of awareness of your surroundings.
9) Avoid exposure to chemical toxins in your food (pesticides, herbicides, chemicals, etc) and on your skin. But also try to avoid the hidden poisons in food like sugars, grains, processed foods, trans and hydrogenated fats, and mercury in certain fish.
10) Exercise your brain daily as your ancestors did. Be inventive, creative, and aware. If your work is not stimulating (or even if it is), and find time to read, write, play an instrument, and interact socially.

Now in the food category this means you don't eat processed food---aka fast food or even normal items you get from the grocery store. He wants you to eat as close as to natural form as possible---organic, no hormones, grass-fed..etc. He also says that we absolutely should not eat grains especially WHEAT. This made a lot of sense to me when I think of how many people are gluten intolerant. He basically says that our bodies are not designed to process grains properly and that it ends up in excess fat. If you know anything about diabetes, you will find that these people have to limit their carb intake because it spikes their insulin. However, it is the intake of grains and processed carbs and not the natural ones in veggies and fruits.
I will write more on that topic later but here's Mark's blog post about why grains are unhealthy.
Now my husband recently had a job schedule change where he is working 10 hour days. The most amazing proof to me is when my husband said by following this blueprint that he didn't "crash" or get tired even though he was up earlier and working longer. That's because grains can cause our blood sugar to spike and then crash causing that immediate "I need to eat now or else" feeling that we get. He would either have Greek yogurt or eggs with spinach in the morning and even at lunch time he wasn't starving. He is by no means overweight, but he just wanted to feel and eat healthier.
I know this is long, but it's hard to explain this whole lifestyle without going to deep into it. I am going to continue to share our journey and let you know how it goes. What's crazy is a blog I recently started following: A Table for Two where Allie and her family are actually doing this exact lifestyle! Her husband has lost 14 lbs in just a few months...and he is not even overweight. Please read her story as she is much further into this journey than I am.

Sometimes and Always
Today for the first time, I am linking up with Megan from Mackey Madness and her linky:
Always: Both dogs will want to be let outside or fed when I've just sat down.
Sometimes: I will re-wash clothes that were in the dryer too long just so I don't have to iron them. (That is if I remember to hang them once they are done in the dryer!)
Always: I will be on the computer too much when little boy is napping when I should be doing something productive!
Sometimes: I really just crave a fast food cheeseburger and a Coke! I know...super healthy, right?
Always: My dog never fails to bark hysterically as I let her outside to our fenced yard #annoying!
Sometimes: My other dog has found an opossum in our yard 3 times in the last 2 weeks. This creature can't take the hint to get lost!
Always: Both dogs will want to be let outside or fed when I've just sat down.
Sometimes: My living room looks like a toy store has just thrown up in it.
Always: I will put the toys away just to watch my son pull everything back again.
Sometimes: I will hide a book that my child has brought to me to read at least 5 times that day.
Always: He will somehow find it and bring it for me to read.

Facts About Me:
1) I LOVE coffee. I originally couldn't stand the flavor but after many visits to Starbucks and paying over $4 for a latte I adapted to coffee--of course with some cream & sugar!
2) I LOVE getting mail. Even though most of the time it's a bill, I still can't help myself to go check it right after the mail man delivers it.
3) I'm not an early bird. Even though I have had to change this a little bit because of having a little one, I still really love sleeping in when I can!
4) When I graduated college, I originally wanted to be an event coordinator. However, those jobs are hard to find so that is how I ended up working in the finance world. I did really enjoy planning my wedding and loved seeing it all come together.
5) I HATE painting. Painting room in the house that is. I believe I've almost painted every room in the house and hated every moment of it. However, I do actually enjoy painting landscapes on canvas and took 4 years of our art in high school and even took a class later on as an adult. I'm not great, but I do enjoy it!
6) I get overwhelmed when my Google Reader says I have 80 posts to read!
7) I'm a good speller. (Most of the time!)
8) I really don't mind doing laundry. I know a lot of people hate folding and putting it away but for some reason this never bothers me. Dusting on the other hand...
9) My favorite ice cream is mint chocolate chip...YUMMY!
10) I LOVE pizza and Mexican food!
11) I've helped my husband install our new deck, our new tile floors, and our kitchen cabinets.

If you could meet one famous person to sit down and have a conversation with, who would it be and why? I'm never really good with these types of questions. Sad I know. So I'm just going to pick someone fun---like Gwen Stefani...just love her! She's a great mom and seems like it would be fun just to hang out with her.
2. If you had a day off with nothing you HAD to do-how would you spend it? I would probably go get a massage and pedicure. I would probably also get some coffee while I was out!
3. What is your favorite fashion item that you own? UGH Kelly is very fashionable, but I would have to say that I am not. I do love my brown boots my husband gave me last Christmas!
4. If you were to paint your nails today, what color would you paint them? I would probably paint them a fun fuchsia color!
5. What was your favorite cartoon growing up? I loved Garfield!
6. If you were given $500 how would you spend it? I would probably use it to go towards redoing my master bedroom. Boring, I know!

10. What is your favorite childhood memory? Hmmm...probably playing basketball with my childhood friends. We had so much fun at our b-ball camps.

A Successful Traveling Weekend
I am happy to report that I made it about 10 hours in the car without running into traffic. This is unheard of with my track record. It was a long time in the car, but I was happy to see my girls and to be there for Sarah's shower. Here are some photos from the weekend (note I am borrowing these pics from Sarah and Beth!)
We also went to Sarah's house to see Baby Sally's nursery. Sarah and her husband Joe did an awesome job on the nursery. It looks like it could be in a magazine! Here's some pictures of the nursery via Sarah's photos. You can also check out more of her nursery on her blog. I especially love the picture of their dog Hank laying in the sunshine.

What a Week
Wow what a first week of January it has been. Between the sniffles going around my house, trying to get all the Christmas stuff put away, and my blog *disappearing* yesterday...it's been quite interesting to say the least. But here's to hoping to a great weekend---I've got a pot roast in the crock pot, tomorrow I am traveling to a friend's house so we can go to our other friend's baby shower, and then on Sunday I'm doing breakfast with another college friend I haven't seen in two years! My how time flies once you start having kids.
So wish me luck on my journey tomorrow, because it never fails that I get stuck in traffic. I'm praying for smooth sailing this go around!

And I'm Over It
So here we are a few days into the new year, and yet again the sickies strike my house. I started getting my 3rd cold in 2 months right after Christmas. My husband had one before Christmas, and now little Nolan is battling a cold as hard as he can. So count it---everyone in my house has been sick 3 times in 2 months. SAY WHAT? I haven't been sick in 3 years. It seems I am more likely to get sick as a SAHM than I was when I worked full-time in an office full of people that were always catching some type of cold.
I'm seriously thinking of burning my house down. It seems these germs are the staying kind.

In the Year 2012...
Every time I say "in the year 20__" I always think of this Conan O'Brien skit. It always cracks me up.
Anyways, back to the serious stuff. I really can't believe it is 2012...I feel like 2011 had just started. But I guess once you have a kid time flies by. I never would have thought that I would have started a blog in 2011 or that my son would now be over a year old.
I've seen a lot of resolutions and 2012 goal posts so I thought I would join in on the fun. Here are some of my goals for the year 2012.
*To continue to try to read a book a month. I've really started reading a lot since I hijacked my husband's kindle...but now that I've got my own I can really go crazy! I am currently reading the Game of Thrones series. These books are long, and I'm on book 4 out of 5. Almost there!
*To save X amount of dollars each month. I've always been a super saver, but now my town is getting a Costco and a Publix so I'm hoping to stretch out more of my couponing skills. Last year we had to adjust to having only one income, so we didn't save as much as we did on a dual income. However, we still were able to meet our savings goal of last year.
*To attend Stroller Strides twice a week. I've met some great moms through this group and not to mention gotten a good workout. Now it will be even more fun since Nolan is older and can interact more with other children.
*To attend a beginner sewing machine class. My mother-in-law bought me a brand spanking new sewing machine for Christmas. I have never even used one before, so I'm going to need a crash course to get started. I'm excited to learn though!
*To attend a photography class. My husband purchased a new spiffy lens for me, so now I need to learn how to use it.
*To cook or eat at home at least 4 times a week. We did pretty good with this last year. Obviously, this also counts if you eat leftovers at home. And who doesn't love a night that you don't have to cook because you have leftovers?!
*To attend a fun activity with Nolan once a week. This could be storytime such as Baby Bookworms, playdates, the zoo, or any other fun "free" activities that we can find.
*To finish all small projects throughout the house. I'm hoping that my husband and I can finish out all the small projects we have on our list. We have already started off on the right foot by totally reorganizing the whole garage on Jaunary 1st! We put in some heavy duty shelving that allowed me to move suitcases, Nolan's clothes that are too small, his swing, and all the holiday decorations into one place. It's amazing!
*To sell our house and buy a new one. We are hoping to be in a bigger house by the end of the year!
